Ingredients:
- 2 cups besan (gram flour)
- ½ cup ghee (clarified butter)
- 1½ cups powdered sugar
- ½ teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, cashews, or pistachios) – optional
- 1 tablespoon raisins – optional
Instructions:
- Roasting the Besan:
- Heat a heavy-bottomed pan or kadai on low heat.
- Add ½ cup ghee and let it melt.
- Add 2 cups besan and roast on low heat for 15-20 minutes, stirring continuously.
- The besan will change to a golden brown color and release a nutty aroma.
- Tip: Sprinkle a few drops of cold water at the end of roasting and mix quickly. This will give the besan a slightly grainy texture, making the ladoos more delicious.
- Adding Flavor:
- Once roasted, turn off the heat.
- Add ½ teaspoon cardamom powder and mix well.
- Cooling & Adding Sugar:
- Let the roasted besan cool slightly (about 5 minutes).
- Add 1 1⁄2 cups powdered sugar and mix thoroughly.
- Shaping the Ladoos:
- While the mixture is still warm, take small portions and roll them into round ladoos.
- If using nuts or raisins, press them gently into each ladoo.
- Serving & Storing:
- Let the ladoos cool completely before storing them in an airtight container.
- They stay fresh at room temperature for up to 2 weeks.
Tips & Tricks for Beginners:
✅ Always roast on low heat – High heat can burn the besan, giving a bitter taste. Be patient!
✅ Stir continuously – This prevents lumps and ensures even roasting.
✅ Test for doneness – Take a pinch of roasted besan, rub between your fingers. It should feel slightly grainy, not raw or sticky.
✅ Use fresh ghee – Old or rancid ghee will affect the taste.
✅ Sift the powdered sugar before adding – This prevents lumps and ensures smooth mixing.
✅ If ladoos don’t hold shape, add a little more warm ghee and mix again.
✅ If the mixture is too soft, let it cool slightly before rolling.
✅ For extra crunch, lightly roast the nuts before adding.
